Rim half of large rocks glass with tajin

Shake hard and dump into glass

Garnish with candied jalapeno

Jalapeño Syrup Preparation

Equal parts sugar and water to create simple syrup. Add 6 jalapeños per litre and bring to a boil. Lower heat and simmer for 5 minutes. Strain candied jalapeños out and keep for garnish.

Shake and dump into collins glass (except soda)

Top with soda

Garnish with rosemary sprig and dehydrated lemon wheel

Rosemary & Hibiscus Syrup Preparation

Equal parts sugar and water. One bundle of rosemary and half of a cup of dried hibiscus. Bring to a boil and simmer for 5 minutes. Strain out rosemary and hibiscus.

Shake and double strain into coupe (everything except the prosecco)

Top with prosecco and garnish with dehydrated lemon wheel

Strawberry Syrup Preparation

Equal parts sugar, water and strawberry purée. Add heat and bring to a boil. Once purée is fully incorporated it is finished. Lower heat if you feel it is burning.
