Parsnip & Pear Soup with Infused Tarragon Oil
Soup: n8 peeled and cut parsnips n6 peeled, diced and cored Bartlett pears n1 ltr 35 percent cream n4 g kosher salt n500 ml water

Serves: 6-8 | Prep time: 20 minutes | Cook time : 45 minutes

Soup: Place everything in a pot and cook until tender, blend till smooth and pass through a fine sieve.

Infused Oil: Blend all together and pass through a coffee filter. Garnish soup.

For individual portions, garnish soup with about 25 ml of oil.
